I intend to have this done by a local mechanic rather than the dealership. I cannot seem to find a list to give to them - so as not to void the warranty. Can anyone point me to such a list?

That website, is halfway decent.As you did not supply a model (4cyl or 6cyl), drive (RWD/AWD) trim level, (GT1, GT2), the best you can do is google what is required.
Note I did this from Australia and came up with a Kia Dealership in Miami FLORIDA where you can put in your car's exact details and it will give you the exact service requirements for your car.

Exactly what don't you understand? Pretty clear to me. A certified and very experienced mechanic and service manager didn't want to work on the Stinger. His comment, I don't need to interrogate him. Don^^Say what?
I do take it to a large dealership. They seem quite competent and I've gotten to know the service advisors. Not a lot more expensive than doing it myself. Don.
Take it to Kia. Don't know about the USA but it is Capped Price Servicing here for the first 7 years. It's a bit pricey but local mechanics don;t leave money on the table. Instead of charging half they take $10 off and they use non genuine parts, and they can't fix warranty items....
