Couple questions. I like to run summer tires rather than all seasons and have a 2nd set of wheels with dedicated snows.
My set up is the staggered F/R with 225/40's up front and 255/35's in the rear on 19's.
Would anyone recommend getting 18's for my snows or just stick with 19's?
There's way more options for 18's
And does this car pick up a 2nd set of TPMS sensors, or can it be programmed through the menu? Or would I need to either go to a dealer
or get a device of some sort to program the new TPMS sensors?

I did the opposite: turned my OEM 19" wheels into my winter setup and put 19" TSW "Watkins" inside the Michelin PS4S for summer driving (actually all but c. three months of the year). Depending on the placement of the valve stem, any aftermarket wheels should clear the Brembo calipers: I'd say just get a square setup of Kia GT wheels for winter, except they are too expensive (unless you can find a set on here going for cheap, it happens often enough to possibly be an option): that way you don't have to research clearance with the calipers with aftermarket wheels: or get a pro wheel shop to find your options, they will make sure the wheels clear the calipers. I'm sure there are a ton of 18" options that will work on the GT Stinger.

TPMS: I had to get aftermarket for the TSW wheels. The TPMS sending unit in the Stinger picked them up just fine: this summer I've had to alternate back and forth between OEM and aftermarket as I've had some work done on my TSW wheels, and the car alternated between sensors just fine.

Considering some cars came with 18's, I sure hope they would fit.

The short answer is yes a lot of options out there will fit in 18" over the brembos. Check out my snowshoe thread here for lots of confirmed options:

I thought the option for those brakes only came with 19's
The factory brembos? many wheels should clear them as long as you have the right offset. My car came with 18 inch wheels.

yeah factory
I didn't know 18's were an option for those from the factory.
According to tirerack there's tons that fit that vehicle as 18's eliminating the staggered setup, which is fine for snows IMO
It just makes me nervous they aren't accounting for the calipers though
It does appear when looking at them that the calipers have more than 1/2 inch clearance around them

I bought a second set of OEM TMPS sensors from ebay in Korea and the car picked them up automatically.
And this summer, I bought a set of complete OEM wheels & tires from a 2021 Genesis G70 and the Stinger also recognised those sensors automatically.
